It's nice to have Binhi Mindful Market around. They opened in 2018 and have popped up at Canvas hotel, all the way up to El Nido with a collection of local farmers, artists, cheesemakers, bakeries, and craftspeople, live potted, and bundled herbs and produce, etc They help people like me make product and food choices that are sustainable while helping all the local vendors.<br />
<br />
Lately in Puerto Princesa, they have teamed up with Rurungan Sunday Market at their compound off Abanico road. They also had a sustainable market every first Sunday of each month.<br />
<br />
Rurungan sa Tubod Foundation formed in 1999 as a livelihood project for local community weavers to continue the traditional way of making pineapple fiber cloth. They weave the cloth called tepiña on-premise on native wooden looms to make beautiful fine shawls and other clothing items. The founder, Czarina Lim, raised her children among them, and now that they are grown up, have taken the concept of a sustainable crafts a few steps further by bringing all types of local and sustainable products to their compound, along with the besutifully woven Rurungan tepiña cloth wares.<br />

Their father Ernie Lim was a dad who went to market by 5 AM daily to feed his kids with the freshest fish and vegetables. He would then concoct a delicious array of meals for them. For the kids, Ernesto, Amihan, Rambie, Rosal, Pablo, it was always a daily adventure to see what dishes Tatay (dad) would create. He came up with bread incorporating sweet potatoes or kamote among other things. The texture is so pleasantly crunchy on the top but still moist inside when toasted. Well anyway, Ermie imbued them with a love of fresh food and, mom Czarina, a love for sustainable crafts, natural products and art. On the same compound as the weavers, two of the siblings, Rosal and Pablo opened up a restaurant called Kusina ni Tito Ernie, or Uncle Ernie's Kitchen in English, with Ernie himself baking the bread when Pablo is busy at the restaurant, although he also bakes.<br />
<br />
With a lot of space on the compound, it looks like they decided to collaborate with Binhi Mindful market sustainable vendors. Now it seems the two siblings, Rosal and Pablo Lim, can concentrate on running their own enterprises while Binhi Mindful Market folks gather up the vendors which they are very good at and were doing anyway at other spaces. It is very nice to see people working for the same goals to help the planet, cooperate and not compete. I hope more people find out about it and switch to sustainable and local products and produce as much as they can.<br />

I had my guys save them to be used to make other things from them rather than throw them out. It is mostly bamboo, but we also have a lot of coconut trees and harvest them to make coconut milk from the meat, the husks are then upcycled into pots for my hanging vegetable garden on the jungle walk.<br />

We have a bamboo deck from our bamboo groves, but I was starting to get stir crazy as our property is still fairly raw and it is muddy to walk around during the long rainy season. Our little deck started to feel confining. I came up with the idea to make a bamboo jungle walk along our hillside so we could take our walks but not get muddy or slip and fall on the little hills.<br />

This is the result of harvesting 6 bamboo groves which dearly needed to be thinned.<br />

Originally it was only around 6X8 feet, and when the bamboo flooring rotted since it was open and exposed to the weather, I had our carpenter make it a little bigger, and now I feel it's just the right size. I also had it covered. For expediency, since the rainy season was upon us and it was getting hosed every day, I had them use bamboo poles and a tarp to cover and protect it so it would not rot as before.<br />

The new deck can now fit outdoor living room furniture, which I am happy to find out, is made right here in Puerto Princesa! The furniture is of synthetic wicker which we found out holds up much better in a forest than natural since too many bugs eat up the natural stuff!!<br />

We are still chugging right along doing what we can in our daily life to leave as small a footprint as we can. We always bring eco bags to the grocery, we carry our own water in reusable canisters, we recycle many plastics and cans etc.<br />
<br />
Life in Palawan has its ups and downs, but I would not live anywhere else.<br />

Dave and his trusted and skilled assistant Jhun, decided to make a solar lit native fishing boat, or banca as they are called here, to give livelihood to an experienced fisherman who needed a boat to go out on. Traditional bancas use diesel-run generators for their lights which are used to attract fish at night. The generators are noisy and also put out noxious emissions. Solar lights do not put out any fumes and the battery that runs them is silent! It is c<span style="text-align: center;">urrently parked at Mangingisda pier, in Puerto Princesa, Palawan. It went out for the first time on a tuna run and came back with a decent haul of yellowfin tuna.</span><br />

The fumes from diesel powered lights are bad for the environment and the fishermen. Our solar lights are so efficient that the captain has been running them all night. The light allows the children to swim next to the boat and cool off during these hot nights of summer. Our solar LED lights last 13 hours!</span><br />

<span style="text-align: center;"><br /><span style="text-align: start;">The fishermen say it costs them an average of 10,000 PHP in diesel, oil, and repairs for their night lights, for a three-day fishing run at sea. There is no cost for our solar lights, except for the initial investment! Therefore, more profit for the local fishermen. </span></span>Our fishermen will not have to breathe in the noxious diesel fumes or limit the use of nights for safety reasons. Plus, it's much better for the environment!<br />

There are 2000 native fishing boats in Puerto Princesa, I am told. Imagine how much better it would be if all the boats were outfitted with solar! Better for the environment and for the health of the fishermen in not breathing fumes but also no noise pollution, as from the generators. Not to mention the 10K PHP in fuel savings for each 3-day trip. That is 100K PHP for 10 three day fishing excursions they can pocket!</span></div>

Part of our property is planted in sugarcane this year. Tubo Delight, a company that sells sugarcane or tubo juice at the local Robinson's mall helped us plant it, and this is our first harvest. Our juice will soon be at their booth at the mall. It's so sweet, plus it's a very healthy drink.<br />
<br />
We used to pay people to clear this part of the land as it was always overgrown with weeds. The canes to plant came from this company and now it's being harvested and making money back instead of lying fallow and going to the weeds! We have a little less than 1 hectare planted in sugarcane. If you have some land you don't know what to do with, go to Tubo Delight Facebook page and send them a message. They are always looking for more planters or sellers of sugarcane. The stalks need to be at least 1 1/2 inches in circumference<br />
<br />
I like to use the sugar cane as BBQ sticks. They don't burn up like the bamboo sticks and when the juice caramelizes, it gives the food on it a great flavor!<br />

<br />
You can make a great desert using sugarcane juice and saba banana or plaintain.<br />
Boil the sugarcane juice till it's thickened and then toss in the bananas till they are cooked and coated with the caramelized juice. You can spice it up with cinnamon, cardamom and other spices to give it a more of a zing too!<br />

Our daughter is going to the local elementary school up the road from us this year, and now we get to have her taken to school in Dave's electric trike. It fits her school mates and even room to pick up a few other students along the way. The school is only 5 minutes away, or about 2.8 km., but the trike makes 3 round trips a day. One in the morning to bring her to school, then get her for lunch, bring her back to school, then go get her from school, and back home again! It has nice shocks for rougher roads, but we are lucky to have the road we ply be totally cemented.</div>

No noise or gas emissions for us! It's a good experience for the village kids too. It might open their minds to the future. After all, the children now are the adults of the future and we hope they can become responsible and eco-aware citizens. It's all old hat to Alysha right now because Dave has been driving her around in electric motorbikes since she was an infant. I imagine someday, she will realize how rarefied her school ride was!<br />

This prototype was completely assembled and made in Puerto Princesa by a local body shop run by William Russel. He co-designed the body with hubby <a href="http://www.danceswithnetworks.com/" rel="nofollow" target="_blank">Dave</a>, based on Dave's passenger load and road conditions here in Puerto Princesa. Dave designed the electrical system and all that other mechanical stuff that makes for a smooth ride.<br />

Goodness, it's been way too long since I have looked at this and it's so yesterday. We have come a long way and here are more photos of what we have been doing with all the bamboo growing around here.<br />
<br />
The lights are all powered by solar batteries. All the light fixtures are inset LED lights. We have solar plugs to operate my PC, lights, and fans for the long 4-hour electrical blackouts lately.<br />

You can see one of the living bamboo clusters in the back of the deck by the marble table. That's sugar cane growing in back of it. It will be made into a healthy juice the canes can be made into BBQ sticks. When grilled with meat stuck through them, they caramelize and give the meat lots of flavor.<br />

It forces me to get off my butt and move. I had them make the wall to the patio, in the back of the tea kettle, out of solid bamboo poles; it has a removable screen in a frame. The cabinetry, all bamboo with space for air to move so things don't get moldy here in the tropics.</td></tr>

All of our light bulbs are LED mounted into the drop ceiling. During the summer, we always have them switched to solar energy. It's really helped with the electric bill and the ubiquitous power outages on this island.<br />

The glass bricks in the wall make it bright enough to shower without turning on any light bulbs.</td></tr>

We have solar panels for our lighting and solar electrical plugs. When there is an electrical blackout, which is almost for 3 hours every day recently, I can still run my PC, three fans and all the lights are LED so we run those all the time.</div>

We have a few groves of Bambusa bamboo on our property in Palawan, Philippines. It's thick and good for building things. Hence, most of everything we build here is made out of it.<br />
<br />
We had a bamboo walkway made that leads to our animal habitat. It was always muddy in the rainy season. Instead of paving it with cement and creating more bogs we built the "floating walkway "so the water can flow under it. It turned out so well and we love it.<br />
We used old bamboo in the grove that the previous owners had cut about 8 feet above the root. It was hardened and dried. Fresh bamboo contains a lot of cellulose which is sugar to the local anay (termites) and Buk Buk insects. We then used an outdoor varnish to help protect it.<br />
<br />
The area became so nice I decided to have a bamboo couch/bench made so that we would have someplace nice to sit outside and listen to the myna birds singing and chatting in the animal habitat.<br />

We are so fortunate to have two carpenters from a local village that know how to work with bamboo and are good at taking direction and then adding their own creative touches.<br />

It has turned out so well, we have decided to put a roof over the walkway and bench so that we can use it even during the rainy season.... and it will certainly last a lot longer out of the sun and rain.<br />
<br />
As things evolve here as we need them, I realized that I would be hanging out there using the internet, so Dave, my hubby had electrical outlets set into the bamboo posts, easy to use but not easily seen to mar the look.<br />

We also had bamboo benches installed on the first landing of the steps that lead to our apartment area.<br />
<br />
Bamboo grows so fast and renews itself so well here in the tropics. We take care of our groves and do not take all of the stalks so that the grove will continue to renew itself. You can literally watch the bamboo grow. One stalk grows over a foot a day. The bamboo in our grove grows to about 80 feet long!<br />

Very flavorful, refreshing and full of zest. My family loves this! I just made it up yesterday since I had all of the fresh ingredients already chilled in the fridge and was able to serve it right away.<br />

If your ingredients aren't chilled first..then place in the fridge until nice and cool, then serve. It can be made ahead of time, as the acid in the lemon and orange keep the avocado from turning black.</div>

In a previous post, I showed how we made our own virgin coconut oil - VCO. Since then I have discovered a couple of really cool and yummy recipes for making your own Magic Shell ice cream topping and chocolate candy as well!<br />

We use raw cacao, roasted and from local farms. It has been pressed into tablet form and we use a nutmeg grater pulverize it finely. You can use cocoa powder. Cacao or pure cocoa is one of the best anti-oxidants on the planet, so it's also a sneaky way to get something really healthy into my daughter and hubby, who are both fussy eaters.<br />
<br />
For the chocolate Magic Shell ice cream topping, you only need 3 basic ingredients, but you can also add anything else you want in the topping like chopped nuts, dried berries or candy sprinkles. Basically whatever you like to put on ice cream! Plus you can double up the recipe if you have a lot of people eating ice cream.<br />

It's a really fun project for kids and VCO is one of the healthiest things you can feed kids, virgin coconut oil has over 160 health benefits.<br />
<br />
<b>MAGIC SHELL CHOCOLATE ICE CREAM Topping</b><br />
<br />
1/2 cup VCO<br />
6 tablespoons unsweetened cocoa powder or more if you like it more bitter or more chocolaty<br />

Raw sugar to taste<br />
<br />
Tiny pinch of salt (optional) but adds flavor<br />
<br />
You can warm the VCO just above room temperature, then remove, melt the raw sugar and throw in a pinch of salt. Mix together till everything is melted and then pour over ice cream...IT'S THAT SIMPLE!!<br />

We are fortunate that nearby, there is a lady who makes pure roasted cacao bean and forms them into tablets, called Tablea. We grate them very fine with a nutmeg grater over the virgin coconut oil. Dave has installed diesel generators to compensate and run our refrigerator and air-con, which he loves so much. The generators run on biodiesel, but when the brownouts last for 10 hours or more, it's also costly.</span></div>

One of the problems we had when the power went out, is that it became dark in the kitchen and the water pump would not run. So Dave hooked those up to the large solar panels. This way if we are not around and no one can start the generator, the staff can still cook and have water.<br />

All of our lights are on solar as well as electrical plugs which run my PC, three fans and all the LED lights.<br />

I have been reading about all the health benefits of virgin coconut oil. I bought a bottle last year and started cooking with it. It has a higher burn temperature than olive oil. It's a bit pricey so after realizing we had so many coconuts on the property, I looked up how to do it online and decided to give it a go. V<span style="background-color: white;">oila, we made our first batch a couple of months ago.</span><br />

First you grate the coconuts, I didn't have to do this part, our handy house helper Shalla was used to doing it in her province for her family, so she cheerfully volunteered for this task.<br />
<br />
The grater we used is a simple rounded metal bar with V shaped burrs cut into it. Our other helper Jhun then nailed it to three scrap boards so they could sit on it. Shalla and Jhun took turns grating away. This tool is sold in almost all native markets in the Philippines. If you don't live here, you will have to improvise if you plan on doing this for yourself. Frankly, if I had to go buy the coconuts and do this, it wouldn't be worth it and would probably be cheaper to just buy at a health food aisle of your supermarket or a health food store itself should carry this by now.<br />

You can use these same steps for making coconut milk for use in cooking or instead of milk or cream in your coffee. After squeezing out the milk, set it aside and then use immediately in the dish you want to cook. It's delicious in curries!<br /><br />When vco is warm it is clear like water, but when the temperature drops, it becomes a solid white. This is completely natural, so don't freak out if this happens to your vco.<br />

You don't have to put the stuff in a blender, but doing so allows more of the milk to be extracted since the meat becomes more pliable and easier to squeeze the milk out of. I've read that freezing the non grated part or grated meat before blending it allows even more oil to be extracted as the meat gets even softer to squeeze, but my freezer is too full of hard to get stuff so I haven't tried that yet.</td></tr>

The plastic tub in the back is where we put the coconut milk to separate for a little more that 24 hours since it's on the cool side with the rains here. If you just want to use the coconut milk for cooking or for use in coffee instead of mild, then stop at this point and use the coconut milk in recipe you are cooking as soon as possible. Because it is not homogenized, the milk soon separates from the water. If this happens just scoop the milk out and put it in the fridge. Coconut milk spoils quickly is hot weather so its best to use the milk right away.</td></tr>

After only an hour, since it's warm here, about 78F today, the milk has begun to separate from the whey, or coconut water and is now floating on top. After 24 hours or longer if it needed, there will be three layers. The oil will be below the scum or froth at the top. We skim that carefully and put it aside, then carefully spoon the Virgin coconut oil off the top of the water. We then heat the scum, not t boiling and leave that to set and extract even more oil from the froth. The coconut water left below, will be put in bottles to be fermented into coconut vinegar.</td></tr>

When we get just the grated coconut meat without the inner brown hard skin, I slow roast the squeezed out gratings in a cast iron pot till it's a rich light brown and then throw in raw brown sugar till it caramalizes. We then put this on our ice cream or in a local desert called suman.</td></tr>

Our property has no view overlooking the sea, as most people were trying to sell us. It is in fact in a dell between two hills, with no view except for the green foliage of the plants and trees that surround us. So I guess I am the farmer in the dell. Though the farmer wouldn't be too accurate since we aren't really farming anything yet. We based our purchase not on views, but on what the land already had to offer and that we could already use. Bamboo and a creek were two of the factors which helped us decide to buy this plot of land.<br />
<br />
We do have little recycled hanging plastic gardens hanging here and there with herbs and such. The soil here is very hard clay, and we haven't gotten the composting thing down well enough to supplement or amend the soil properly yet. So little planters and bottles are what we can easily deal with for the time being.<br />

Most of the buildings on the property are made of the bamboo from our groves, the kind of thick bamboo that is good for building huts and furniture. I've always loved bamboo and dreamed of having lots of it in my own place, and now that dream is real.<br />
<br />
The first building we put up was a little bamboo hut for the water pump. We added a shower room so that when we came out, we could freshen up with nice clean well water before heading back to town. We also added a little porch under the eaves where we could sit and ponder our next move and had a bamboo table made from our own bamboo. That was so exciting.<br />

We raise our own chickens which wander freely about the property. I just love watching chickens for some reason, and I really love the taste of free-range chicken eggs and chicken. We only harvest the males for meat since all they do is chase the hens and fight amongst each other.<br />
<br />
<a href="http://mypuertoprincesa.net/" rel="nofollow" target="_blank">Puerto Princesa</a> has a lot of electrical brownouts. It's just gotten worse as the unprecedented building of commercial properties has increased since the <a href="http://www.squidoo.com/palawan-underground-river" target="_blank">PPC Underground River</a> became one of the New 7 Wonders of the World. The power company was already having time supplying the residents and business in 2009 and they haven't seemed to cope with all the new power users.<br />
<br />
To counter the brownouts, all the solar lights keep our property well lit at night and we use a diesel generator to power everything else during these frequent brownouts. Lately, they have been lasting over 11 hours and yesterday, we had 4 during the day and in the middle of the night. The diesel generator has made our lives so much more comfortable. We are aiming at replacing this with more solar panels as we can over the years.<br />

We use all parts of the coconut. The rice hulls and sawdust keep the hut smelling nice When it gets too soiled we take it all out and put the liter in our garden to improve the soil. Eventually, we will use the water from this to experiment with aquaculture. We have two other cistern in different locations to harvest rain for washing clothes and watering our plants.</td></tr>

When I saw it I asked our handy helper Jhun not to trash it but to make me a jewelry tree out of it. This is what he came up with. Isn't it cool? He used a coconut shell as a base. We have a lot of coconut shells since we grate our own coconuts for the milk and reuse them in things like this.</td></tr>

We have placed them in several places. This one is above my desk and I can use it all day to light up my whole office space. The bamboo base is, of course, scrap bamboo which would normally have been burned, but now our helper knows better uses than burning!! Yay!</td></tr>
